Chocolate Chip Cookies

I love cookies, but I have found that gluten free cookies tend to be hard and crunchy. That’s not always a bad thing, but sometimes I want a chewy cookie. So I decided to find/figure out a good gluten free chocolate chip cookies recipe that would result in a tasty and chewy cookie. This recipe is the result.

Ingredients:

  • 2 sticks of butter, melted

  • 1 cup of brown sugar, packed

  • 1 cup of granulated sugar

  • 2 large eggs

  • ½ tablespoon of vanilla extract

  • 2 ½ cups of flour

  • 1 teaspoon of baking powder

  • 1-2 cups of chocolate chips

Steps:

  1. Preheat oven to 375 F

  2. Whisk together brown sugar, granulated sugar, and melted butter until evenly combined

  3. Add in eggs and vanilla, until smooth

  4. Add the flour and baking powder, until smooth

  5. Fold in chocolate chips

  6. Scoop balls of dough (or mold with hands) and place on baking tray lined with parchment paper

  7. Bake for 12-15 minutes
