Cornbread

This will definitely satisfy any cornbread craving, but make sure to serve it with butter (or margarine)!

Ingredients:

  • 4 tablespoons of butter, melted, plus more for dish

  • 3 cups of yellow cornmeal (not coarsely ground)

  • ¼ cup of sugar

  • 1 cup of hot water

  • 1 ½ cups of buttermilk (whole milk will work)

  • 3 large eggs

  • 1 teaspoons of baking powder

  • 1 teaspoon of baking soda

  • 2 teaspoons of kosher salt

Steps:

  • Preheat the oven to 450ºF

  • Butter a 9x13 baking dish and lightly dust with gluten free flour or cornmeal

  • Combine 1 cup of cornmeal and the sugar in a large bowl

  • Add hot water and whisk to combine; let stand for 5 minutes

  • Whisk the buttermilk, eggs, baking powder, and baking soda in a medium bowl, then whisk into the cornmeal mixture until smooth

  • Add the remaining 2 cups of cornmeal and 2 teaspoons of salt and whisk to combine

  • Stir in the melted butter

  • Pour the batter into the prepared baking dish and bake until golden brown, about 25 minutes
