Cornbread
This will definitely satisfy any cornbread craving, but make sure to serve it with butter (or margarine)!
Ingredients:
4 tablespoons of butter, melted, plus more for dish
3 cups of yellow cornmeal (not coarsely ground)
¼ cup of sugar
1 cup of hot water
1 ½ cups of buttermilk (whole milk will work)
3 large eggs
1 teaspoons of baking powder
1 teaspoon of baking soda
2 teaspoons of kosher salt
Steps:
Preheat the oven to 450ºF
Butter a 9x13 baking dish and lightly dust with gluten free flour or cornmeal
Combine 1 cup of cornmeal and the sugar in a large bowl
Add hot water and whisk to combine; let stand for 5 minutes
Whisk the buttermilk, eggs, baking powder, and baking soda in a medium bowl, then whisk into the cornmeal mixture until smooth
Add the remaining 2 cups of cornmeal and 2 teaspoons of salt and whisk to combine
Stir in the melted butter
Pour the batter into the prepared baking dish and bake until golden brown, about 25 minutes
