Hey there!

I’m Debbie, a lawyer by day, marathon runner by early morning, who unfortunately suffers from a gluten allergy. Making gluten free food that is good can sometimes be a challenge, but I think I’ve done a pretty good job. I hope you find a recipe (or two!) that you enjoy from my blog!

Easy Bagels

If you want to make a quick and easy bagel, this is the best recipe. It is fairly quick and the Greek yogurt results in a nice tangy flavor.

Ingredients:

  • 1 packet of yeast

  • ¼ cup of lukewarm water

  • 1 ¾ cup of flour

  • 1 teaspoon of Kosher salt

  • 10-16 ounces of Greek yogurt

  • Everything but the bagel seasoning (optional)

  • 2 tablespoons of Kosher salt (for boiling water)

  • 2 tablespoons of baking powder (optional)

  • Egg wash (optional)

Steps:

  • In a bowl, pour yeast and then add water; let sit for about 5 minutes

  • Add flour, Kosher salt, everything but the bagel seasoning (optional), and Greek yogurt. Mix together until it sticks together

  • Cover with plastic wrap and let sit for at least an hour at room temperature

  • On a floured surface, divide dough into 6 pieces, roll out each piece into a roughly 8-inch a snakelike shape, tapering at the ends, and pinch the ends together to form a circle

  • Place bagels on a baking sheet with wax or parchment paper and place in fridge for at least 1 hour (optional, but recommended)

  • Preheat the oven to 400ºF

  • Bring a large pot of water to boil; once boiling, add 2 tablespoons of Kosher salt and the baking soda (optional—it will cause these bagels to get somewhat flat)

  • In batches, place bagels in the water and boil for one minute on each side; remove and let bagels drain on cooling rack (if you don’t have a cooling rack, putting them on paper towels also works)

  • If you want to add toppings to the bagel (e.g. sesame seeds, poppy seeds, everything but the bagel seasoning) you can place it in a bowl of the topping as soon as bagels drain a bit, or you can use an egg wash on the top (egg + water) and sprinkle the toppings on

  • Bake for 20-25 minutes, until bagels are golden brown
