Easy Bagels
If you want to make a quick and easy bagel, this is the best recipe. It is fairly quick and the Greek yogurt results in a nice tangy flavor.
Ingredients:
1 packet of yeast
¼ cup of lukewarm water
1 ¾ cup of flour
1 teaspoon of Kosher salt
10-16 ounces of Greek yogurt
Everything but the bagel seasoning (optional)
2 tablespoons of Kosher salt (for boiling water)
2 tablespoons of baking powder (optional)
Egg wash (optional)
Steps:
In a bowl, pour yeast and then add water; let sit for about 5 minutes
Add flour, Kosher salt, everything but the bagel seasoning (optional), and Greek yogurt. Mix together until it sticks together
Cover with plastic wrap and let sit for at least an hour at room temperature
On a floured surface, divide dough into 6 pieces, roll out each piece into a roughly 8-inch a snakelike shape, tapering at the ends, and pinch the ends together to form a circle
Place bagels on a baking sheet with wax or parchment paper and place in fridge for at least 1 hour (optional, but recommended)
Preheat the oven to 400ºF
Bring a large pot of water to boil; once boiling, add 2 tablespoons of Kosher salt and the baking soda (optional—it will cause these bagels to get somewhat flat)
In batches, place bagels in the water and boil for one minute on each side; remove and let bagels drain on cooling rack (if you don’t have a cooling rack, putting them on paper towels also works)
If you want to add toppings to the bagel (e.g. sesame seeds, poppy seeds, everything but the bagel seasoning) you can place it in a bowl of the topping as soon as bagels drain a bit, or you can use an egg wash on the top (egg + water) and sprinkle the toppings on
Bake for 20-25 minutes, until bagels are golden brown
