Hey there!

I’m Debbie, a lawyer by day, marathon runner by early morning, who unfortunately suffers from a gluten allergy. Making gluten free food that is good can sometimes be a challenge, but I think I’ve done a pretty good job. I hope you find a recipe (or two!) that you enjoy from my blog!

Cinnamon Apple Waffles

Cinnamon Apple Waffles

“And in the morning, I’m making waffles!” - Donkey from Shrek. This is a simple recipe and the waffles are delicious!

Ingredients:

  • 2 eggs

  • 1 cup of gluten free flour

  • ½ teaspoon of salt

  • ½ teaspoon of baking soda

  • ½ teaspoon of baking powder

  • 1 cup milk or non-dairy milk

  • ½ cup (1 stick) of melted butter

  • Toppings of your choice (syrup, cinnamon apples, chocolate chips, etc.)

Steps:

  • Preheat waffle iron

  • Beat eggs

  • In a separate bowl, combine flour, salt, baking soda, and baking powder (if making cinnamon apple waffles, add some cinnamon)

  • Add flour mixture and milk alternately to beaten eggs, starting and ending with the flour mixture

  • Add melted butter and combine thoroughly

  • Pour batter into waffle iron (do not overfill) and remove when cooked (if you like crispier waffles, keep it in the iron for longer)

  • Add toppings; for this recipe, I added diced apples covered in cinnamon sugar and heated them up
