Hey there!

I’m Debbie, a lawyer by day, marathon runner by early morning, who unfortunately suffers from a gluten allergy. Making gluten free food that is good can sometimes be a challenge, but I think I’ve done a pretty good job. I hope you find a recipe (or two!) that you enjoy from my blog!

Butter Pecan Ice Cream

Butter Pecan Ice Cream

It’s never to cold for ice cream! This recipe is simple and delicious. It does require an ice cream maker (such as Cuisinart’s), but you could whisk it by hand and put it in the freezer.

Ingredients:

  • 4 tablespoons of butter

  • 1 cup of pecans

  • 1 teaspoon of Kosher salt

  • 1 cup of whole milk

  • ¾ cup of sugar

  • 2 cups of heavy cream

  • 1 teaspoon of vanilla

  • Pinch of Kosher salt

Steps:

  • Melt butter in a medium skillet over medium heat

  • Add the pecans and 1 teaspoon of salt and cook over medium-low heat, stirring frequently, until pecans are toasted and golden, about 6-8 minutes

  • Remove pecans from heat, strain, and set pecans aside to chill

  • In a medium bowl, whisk to combine milk, sugar, and pinch of salt, then add heavy cream and vanilla

  • Turn the ice cream machine on and pour the mixture in

  • Mix until thick, about 30 minutes, then add pecans and let mix for another 2-5 minutes

  • Transfer to an airtight container and place in freezer for at least two hours

  • Enjoy!
